Speaking as someone who occasionally checks out the subreddit for the remake, I can assure you: The Jessie shipping is definitely, already happening.
And yeah, I was a little surprised, too, when one of the first words out of Jessie's mouth was, "He sure has balls--" Me: *GASP*
SE has gotten so much back in response to the mistranslation of the tail laser bit that I think they were bound and determined to NOT have it in there. (Amusingly, there is a reference to it in FFXIV.)
The battle system gets easier after the first time. Scorpion fight was hard for me first time, too, but one thing I found was helpful was going into the options menu and changing the buttons for switching what creatures are locked on.
Also, I haven't had the chance to really try it, but switching Cloud from Operator to Punisher mode counts as a block, which means he reacts with a super strong counter. I also found that when I relaxed and just let myself use abilities and spells more, things went better.
(hahahaha it took an embarrassingly long time for me to realize that Barret had the cure spell ;_;)
Anyway, last time I tried it with the regular combat system, it... it's not quite second nature but much easier!
